  1. Prepare the meat
    In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. Create the base
    In the same pot, add the chopped onions and grated carrots. Sauté until the vegetables are soft and the onions are translucent, about 5 minutes. Add the tomato paste and cook for another 2 minutes, stirring constantly.
  3. Combine the meats
    Return the browned beef to the pot. Add the sliced smoked sausage and diced ham. Stir to combine all the meats with the vegetable mixture.
  4. Add the broth and pickles
    Pour in the beef broth. Add the julienned pickles, bay leaves, and bring the soup to a boil. Reduce heat to low, cover, and simmer for about 45 minutes until the beef is tender.
  5. Finish the soup
    Add the olives and capers to the soup. Simmer for an additional 10 minutes. Taste and adjust seasoning if necessary. The soup should have a balanced sour-savory flavor profile.
  6. Serve with garnishes
    Remove the bay leaves. Ladle the hot soup into bowls. Serve with a dollop of sour cream, fresh dill, and a slice of lemon on the side. The soup is traditionally enjoyed with a piece of dark rye bread.
