Prepare the meatIn a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
-
Create the baseIn the same pot, add the chopped onions and grated carrots. Sauté until the vegetables are soft and the onions are translucent, about 5 minutes. Add the tomato paste and cook for another 2 minutes, stirring constantly.

Combine the meatsReturn the browned beef to the pot. Add the sliced smoked sausage and diced ham. Stir to combine all the meats with the vegetable mixture.

Add the broth and picklesPour in the beef broth. Add the julienned pickles, bay leaves, and bring the soup to a boil. Reduce heat to low, cover, and simmer for about 45 minutes until the beef is tender.
-
Finish the soupAdd the olives and capers to the soup. Simmer for an additional 10 minutes. Taste and adjust seasoning if necessary. The soup should have a balanced sour-savory flavor profile.
