  1. Sear the beef
    Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches to avoid overcrowding, sear the beef cubes on all sides until browned, about 3-4 minutes per batch. Transfer the browned beef to a plate and set aside.
  2. Cook the aromatics
    In the same pot, reduce heat to medium and add the diced onions. Cook, stirring occasionally, until soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the paprika, caraway seeds, bay leaves, and dried marjoram, cooking for 30 seconds to release the flavors.
  3. Combine and simmer
    Return the browned beef to the pot and add the beef broth and tomato paste. Stir to combine, then bring to a boil. Reduce heat to low, cover, and simmer for 1 hour 30 minutes, or until the beef is nearly tender.
  4. Add vegetables
    Add the diced carrots, parsnips, potatoes, and red bell pepper to the pot. Continue to simmer, covered, for an additional 30-40 minutes, or until the vegetables and beef are completely tender.
  5. Season and serve
    Remove the bay leaves. Season the soup with salt and freshly ground black pepper to taste. If the soup is too thick, add a little more beef broth or water to reach your desired consistency. Ladle the hot soup into bowls and serve with crusty bread or traditional Hungarian csipetke (pinched noodles).
