  1. Prepare the pork
    Pat the pork tenderloins dry with paper towels. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the tenderloins, coating them evenly. Let sit at room temperature for 15 minutes.
  2. Preheat the oven
    Preheat your oven to 400°F (200°C). Place a large oven-safe skillet over medium-high heat.
  3. Sear the tenderloins
    Add the seasoned pork tenderloins to the hot skillet and sear on all sides until golden brown, about 2-3 minutes per side. Transfer the skillet with the pork to the preheated oven.
  4. Roast the pork
    Roast the pork in the oven for 15-18 minutes, or until an instant-read thermometer inserted into the thickest part registers 145°F (63°C). Remove from the oven and transfer the pork to a cutting board. Tent with foil and let rest for 5-10 minutes.
  5. Make the balsamic glaze
    While the pork is resting, place the same skillet over medium heat. Add balsamic vinegar, honey, Dijon mustard, and brown sugar. Bring to a simmer, stirring frequently to dissolve the sugar and incorporate any browned bits from the bottom of the pan. Simmer for 5-7 minutes until the mixture reduces and thickens to a glaze consistency. Remove from heat and whisk in the butter until melted and incorporated.
  6. Slice and serve
    Slice the rested pork tenderloin into 1/2-inch medallions. Arrange on a serving platter and drizzle generously with the balsamic glaze. Serve immediately with remaining glaze on the side.
