Prepare the ingredientsPreheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Remove the puff pastry from the refrigerator and allow it to thaw until pliable but still cool to the touch, about 30 minutes.

Prepare the BrieIf desired, use a sharp knife to carefully remove the top rind of the Brie wheel. This is optional, as the rind is edible, but removing it allows the cheese to melt more freely when baked.

Add toppingsIn a small bowl, mix together the honey or maple syrup, chopped nuts, dried cranberries, brown sugar, and thyme leaves. Set aside.

Wrap the BrieRoll out the puff pastry sheet on a lightly floured surface to a 12-inch square. Place the Brie wheel in the center of the pastry. Spoon the honey-nut mixture on top of the Brie. Fold the pastry up and over the Brie, pleating it as necessary to completely enclose the cheese. Pinch the edges together to seal.

Apply egg washIn a small bowl, whisk together the egg and water. Brush the egg wash over the entire surface of the pastry to ensure a golden, shiny finish when baked.

Bake until goldenTransfer the wrapped Brie to the prepared baking sheet. Bake for 25-30 minutes, until the pastry is golden brown and crisp. Allow to rest for 5-10 minutes before serving.

Serve warmTransfer the baked Brie to a serving platter. Garnish with fresh thyme sprigs. Serve warm with crackers and sliced apples. For best results, cut into it while still warm so the cheese flows out when sliced.
