
Apple Oven Pancake

Prepare the batterIn a blender, combine the eggs, flour, milk, granulated sugar, vanilla extract, and salt. Blend until smooth with no lumps, about 30 seconds. Let the batter rest for 10 minutes while you prepare the apples.

Preheat the ovenPlace a 10-inch cast-iron skillet or oven-safe pan in the oven and preheat to 425°F (220°C). The skillet needs to be hot before adding the batter.

Prepare the applesIn a medium bowl, toss the sliced apples with brown sugar, cinnamon, and nutmeg until evenly coated.

Cook the applesCarefully remove the hot skillet from the oven using oven mitts. Add the butter and swirl to coat the bottom and sides of the pan. Add the apple mixture and return the skillet to the oven for 5 minutes until the apples begin to soften and caramelize.

Add the batterRemove the skillet from the oven again and quickly pour the batter over the hot apples. Immediately return the skillet to the oven.

Bake the pancakeBake for 18-20 minutes until the pancake is puffed up and golden brown around the edges. Do not open the oven door during the first 15 minutes of baking to prevent the pancake from deflating.

Serve immediatelyRemove from the oven and dust with powdered sugar. The pancake will begin to deflate as it cools, which is normal. Slice into wedges and serve immediately with maple syrup if desired.
