  1. Prepare the batter
    In a large bowl, whisk together the eggs and milk until well combined. Add the flour and salt, and whisk until the batter is smooth with no lumps. Stir in the melted butter and vanilla extract if using. Let the batter rest at room temperature for 30 minutes.
  2. Preheat the oven
    While the batter is resting, place a popover pan or muffin tin in the oven and preheat to 450°F (230°C). Allowing the pan to heat in the oven is crucial for creating the steam that helps the popovers rise.
  3. Prepare the pan
    Carefully remove the hot pan from the oven. Working quickly, add 1/2 teaspoon of vegetable oil to each cup of the popover pan. Use a pastry brush to coat the sides of each cup, making sure the entire surface is greased.
  4. Fill the pan
    Give the batter a quick whisk, then fill each cup about 2/3 to 3/4 full. Do not overfill as the popovers need room to expand.
  5. Bake at high temperature
    Return the pan to the oven and bake at 450°F (230°C) for 20 minutes. Do not open the oven door during this time as the drop in temperature can cause the popovers to collapse.
  6. Reduce heat and finish baking
    Without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for an additional 15 minutes, or until the popovers are golden brown and crisp.
  7. Release steam and serve
    Remove the popovers from the oven and immediately prick each one with a knife to release steam. This helps prevent them from becoming soggy. Gently remove from the pan and serve hot.
