  1. Prepare the black-eyed peas
    After soaking the black-eyed peas overnight, rub them between your hands to remove the skins. Rinse thoroughly until all skins are removed and the water runs clear. This step is crucial for achieving the right texture.
  2. Make the batter
    In a food processor, combine the peeled black-eyed peas, chopped onion, garlic, salt, pepper, and dried shrimp powder if using. Process until you have a smooth, thick paste. Transfer to a large bowl and beat with a wooden spoon for about 5 minutes to incorporate air into the batter.
  3. Prepare the shrimp filling
    Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3 minutes. Add the shrimp and cook for 2 minutes. Add tomatoes, cilantro, and minced peppers. Cook for another 5 minutes until shrimp are pink and cooked through. Set aside.
  4. Heat the oil
    In a deep, heavy-bottomed pot, heat dendê (palm) oil to 350°F (175°C). The oil should be about 3 inches deep. If you don't have dendê oil, you can substitute with a neutral oil, though the flavor will be different.
  5. Fry the acarajé
    Using a large spoon or an ice cream scoop, carefully drop about 1/4 cup of batter into the hot oil. Fry 3-4 fritters at a time, being careful not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes per side.
  6. Drain and split
    Remove the acarajé with a slotted spoon and drain on paper towels. While still hot, carefully split each fritter down the middle with a knife, creating a pocket for the filling.
  7. Fill and serve
    Spoon some vatapá paste into each acarajé pocket, followed by the shrimp filling. Serve immediately while still hot, garnished with extra cilantro if desired.
